To review or introduce a concept: create a flipchart that includes a chance for individual students to come up to the board or use activslate to underline or move objects to show understanding. Follow-up with pages that use activotes on similar themes to see group understanding.

This is absolutely crucial! I've seen so many people using interactive boards as glorified projector screens that I wondered if the interactivity (beyond the teacher) had fallen off the radar.
My students love doing cloze exercises, quizzes, vocabulary matching, timeline manipulation etc. I give one the pen and the rule is that the pen must be passed on to another student, not back to me. This works well.
I'd like to see some research and a focus on resources that involve the students kineasthetically...

I'm pleased to hear you're engaging and involving the pupils this way - Any tips about maintaining the pace of the lesson Anne?

How about some action research in your own classroom - it would be interesting to hear how teachers are engaging in multimodal approaches to learning and the benefit they find this brings.
