Over the Easter break I rummaged in my loft and found an old monitor. I plugged it into my laptop and went to Screen Properties > Settings and set the old monitor to act as extended desktop. This makes my screen extend across both monitors.
Activstudio 3 has special support for multiple monitors that can help do clever things when the projector is set for a different display - This is discussed in detail here:

What I have found useful is that I can keep a full screen application open such as a Web Browser on one screen (you drag the window onto the other screen) and cut and paste or drag and drop images to a flipchart on the other. This can really speed up preparation time and is ideal with AP which you can leave working full screen.
It also means you can be browsing Promethean Planet on one screen and testing your downloads on the other. There are also many tutorials on the web to help learn programs which are ideal presented this way.
Perhaps not enough benefits to justify buying a spare monitor - but if you have one already from past computer purchases - here is way of giving it a new lease of life..
