To take the teaching of statistics in Years 5 to 9 to a whole new level, I recommend Tinkerplots from Curriculum Corporation. It's interface is designed for students to explore relationships between variables rather than just crank out summary stats and graphs.

Because much of what you do with tinkerplots is drag things around, it interfaces with an IWB beautifully. And annotating over the top is seamless.
