How do you create the self marking flipcharts as used in activities and the ethanol flipchart.
They seem really good?

If what you are referring to is "an activity" then this a separate application that has been used to create them. Probably using flash.

ACTIVstudio is an authoring tool and therefore doesn't have the "dynamic" capability to which you are referring.

The nearest that could be offered is to use ACTIVote.
